Subject order options in order details

Hi, how do I get the order option that I added to 'settings' to show up in the order details screen of the backofficelite? When I go into the order I see the name, address, what they ordered, etc but I don't see the option I created to collect fed ex #'s. How do I get this to show up?

Also, what does 'jmail - authentication' mean when selecting the email component?
